A couple of weeks before Rachel’s wedding, we had planned a bachlorette party at a local sports bar. Unfortunately, Rachel’s wedding and work stress really started overwhelming her and she decided that she didn’t feel like a rowdy night out.

To make for a special night, we decided to surprise her with dinner at an undisclosed location followed by sangria, chicken wing dip and wedding-themed movies in our jammies at mom’s house. Definitely a more relaxing night “out”.

I surprised Rachel with dinner reservations at the Melting Pot. Mom and Rachel had never gone before so it was a fun treat.

Taking flash pictures in the dark restaurant completely humiliated Rachel so I felt honor-bound to take lots of pictures. Rachel really appreciated it. πŸ˜‰

I would like to point out that I had been tempted to bring a fake veil and a dozen roses so the embarrassment was mild compared to what it could have been. AND, we weren’t the only ones taking pictures.

After two hours of fonduing, we headed to mom’s house. By the time we got situated, it was getting late. And after two hours of eating, no one was hungry. There was a little sangria drinking but not much. We sure are a wild bunch, aren’t we?!?!?

Rachel asked to watch Tangled and really enjoyed it. After the movie, Rach and I went home. She ended up taking Bride Wars and the pitcher of sangria home with her to continue the party on her own. Oh, to be young and child-free again. πŸ˜‰

First, Mike’s mom and I took the boys to see the Easter Bunny a few days before Easter. Thankfully, they were really well behaved while waiting in line and completely LOVED the Easter Bunny. πŸ™‚

This recipe is still a work in progress but I thought I’d share anyway. The first few times we’ve had issues with it being a little greasy and it getting absorbed in the crust a little bit. Not sure if we used too much butter, if it was oil from the cheese, the type of pizza crust, etc. We’re still experimenting but LOVE making this. The last time we made it (picture above) was definitely the best mix of ingredients and not too greasy at all.

Just a warning, the pizza is so good but definitely hot. We usually make 2 pizzas: 1 Buffalo Chicken Wing and 1 traditional cheese. The boys eat the cheese pizza and Mike and I usually need a slice to offset the heat in the Chicken Wing pizza. πŸ™‚

BUFFALO CHICKEN WING PIZZA

INGREDIENTS:
Pizza dough
Chicken breast, boneless and skinless
Butter
Frank’s Red Hot
Marie’s Blue Cheese
Mozzarella

Please note there are no measurements for the ingredients. This is definitely a recipe that you kind of eye-ball when making. πŸ™‚

INSTRUCTIONS:
Preheat the oven to 350 degrees (or follow the baking instructions on the pizza dough).

Cut the chicken into bite-sized pieces and toss in a pan with a little butter. Cook until the chicken is done.

Pour chicken into a a bowl with hot sauce (also consider garlic powder, salt and pepper). Coat completely.

Prepare the pizza crust by pouring blue cheese on the dough. Be sure not to put too much blue cheese on the pizza. Add hot sauce to the blue cheese.

Pour the chicken mixture over the top of the pizza. Make sure that the chicken is evenly distributed on the pizza crust.

Cover with mozzarella cheese.

Bake the pizza according to the instructions on the pizza dough or crust. The pizza will be done when the mozzarella first starts getting some dark bubbles around the highest points of the pie.

Take the pizza out and let it rest for 4-5 minutes before cutting and serving.

You’re probably wondering what on Earth happened to me in May, right? 2 blog posts in 31 days is pretty crappy, right?

Well, let’s talk about May. πŸ™‚

I was training for a 5K (2 5Ks actually). This included a weekly run Thursday evenings at UB with the Fleet Feet No Boundaries group.

Mike was in Cooperstown from 5/3-5/5 for a work conference.

We had Ian’s CPSE meeting at his school on 5/3.

The boys got haircuts in preparation for Aunt Rachel’s wedding.

Mike and I went to see Wicked.

Mother’s Day.

I had the April month end close.

I also had multiple conference calls and meetings at work for random projects that got dumped on my desk at the last minute.

Mommies and Muffins event at Matthew’s preschool.

All 3 boys were fitted for and picked up tuxes for the wedding.

We had the wedding rehearsal. And rehearsal dinner.

On the 14th, Aunt Rachel got married.

Ian had his UPK farm field trip.

I hit our 180 day mark for making dining reservations for Disney.

Then I went out of town for 4 days for work conferences.

Matthew had his last day of 2 year old preschool.

We started potty training Matthew.

We also had multiple t-ball games, a 2-hour kindergarten orientation meeting, a NKOTBSB concert, Mike’s volunteer session at the Little League concession stand, Memorial Day cookout, and last but not least…..

I sprained my ankle:

I know it’s kind of hard to see but my foot is bruised from my heal to pretty much my toes. (Please excuse the fact that I clearly need a pedicure.)

I’m sure it comes as no surprise when I tell you that I couldn’t be happier to have the month of May 2011 behind us. Hopefully, I can get caught up on blogging soon.
